Slow Cooking Thursday – Baked Apples with Cinnamon and Raisins

Maya loves (Loves!) baked apples. She likes them even better if I cook them, then put them in the freezer for a half hour or so, until they’re “cold, cold, really, really cold – please, Grammy!”
Go figure…

Here’s the slow cooker recipe I’ve found that turns out apples to please our Little Miss

You’ll need:

6 to 8 medium cooking apples
2 or 3 tablespoons raisins
1/4 cup sugar
1 teaspoon cinnamon
2 tablespoons butter or margerine
1/2 cup of apple juice

Core the apples and peel away the top 1/2 inch or so of apple peel.
Mix the raisins, sugar, and 1/2 teaspoon of the cinnamon in a small bowl;
fill the apples with this mixture.
Place the apples in the slow cooker, dot with the butterĀ or margerine and sprinkle with the remaining cinnamon.
Pour 1/2 cup apple juice around apples.
Cover and cook on LOW for about 6 hours, until apples are tender.

We like them warm with a bit of vanilla ice cream -
but who’s to say? Maybe you’llĀ find Maya’s “cold, very cold” freezer method worth a try…

    I love my slow cooker. But I cook baked apples in a corning ware in the microwave. This is only thing I cook that way. The apples come out soft enough to eat, but not so soft as to be mush. Personally, I love the smell but don’t like cooked apples. Such a shame!

    The put it in the freezer til its cold part reminds me of Grandma Ryder making us hot chocolate and then putting cold milk in mine. She was a good grandma!
