Tuesday Cooking For Two

Tuesday, April 27th, 2010

I found an old cookbook at the flea market – published by the Dept. of Agriculture in 1974. The preface explains “the recipes are basic and cover all types of menu items. All of the main dish recipes include suggested menu ideas for completing the meal. Most of the recipes are for two servings and would be useful for one and two person households. They should be popular with all small families and especially appealing to older people…”

Sounds ideal for Grampy and me…. :)
I don’t have much going on for Tuesday blogging, so I’ll work my way through the book and see what we have here.
Let’s start with -

Top Of The Stove Meatloaf

1/3 pound ground beef ( about 1 cup lightly packed)
2 tablespoons uncooked rolled oats
1 tablespoon finely chopped onion
3 tablespoons milk
1/2 teaspoon salt
pepper, as desired
1/4 cup water
1/2 cup tomato sauce

Put all ingredients except water and tomato sauce in a bowl. Mix well.
Shape into 2 loaves. Brown loaves on all sides in a greased fry pan over medium heat.
Pour off fat.
Add water. Pour tomato sauce over loaves.
Cover and cook over low heat 30 minutes. Add more water during cooking, if needed.
Makes 2 servings

Menu Idea: Serve with macaroni salad, green beans, and canned fruit or fresh fruit in season.

click on the picture to enlarge it and see how much fun I’m having! This was a great idea… :(

Really now – does that pony leader seem old enough to be responsible for me? And what’s up with that pony?

Am I having fun here?
