Tuesday Cooking for Two – Quick Borscht

June means the opening of the Farmer's Markets – everyone is hungry for the first vegetables of summer!

 

Quick Borscht

 

2 small raw beets, finely shredded

1 cup cabbage, finely shredded

4 tbsp. chopped onion

10 1/2 oz can beef bouillon, diluted according to directions on can

1/8 tsp. pepper

 

Add beets, cabbage, onion, and pepper to diluted bouillon. Bring to boiling and simmer 10 min. Serve hot, topped with spoonful of sour cream. 4 servings
