Vintage Recipe Thursday – Salmon Patties – a great recipe for meat free Fridays

Here’s a recipe from the 50′s that we still enjoy!
Salmon Patties
1 large can salmon (the soup can size, not the tuna can size)
1 egg
About 1/2 tube of crushed Ritz crackers ( put the crackers in a ziploc bag and use a rolling pin to crush them into crumbs)
1 tblsp. lemon juice
Mix all ingredients well and shape into patties; fry in a little margerine until golden

We like these too. Sometimes I add a splash of worcheshire sauce.

This is the way I make salmon patties, as well; only I beat in an egg as a binder to the crackers – and use soda crackers instead of the Ritz.
